I found this recipe on Pinterest from DashingDish.com ( a great site for recipes of all kinds, but I love her GF stuff). I am always on the lookout for yummy gluten-free things I can make for myself and my boys. Ideally, I’d love for my whole family to eat GF all the time but that is hard to do for us to do consistently (yet). So anytime I find something that they’ll LOVE and its GF, its a keeper for me. Maybe it will be for you too.
2 1/2 cup Oats (old fashioned kind, not quick cooking)
1 cup Plain low fat greek yogurt (I used Stonyfield Organic Vanilla Yogurt since I had that on hand)
3/4 cup Sweetener of choice, (that measures the same as sugar) or 1/4 cup baking stevia sweetener
1 1/2 tsp Baking powder
1/2 tsp Baking soda
2 cups Strawberries, diced, and patted dry (1/2 cup set aside to be placed on top)
1 tsp lemon juice
Preheat oven to 400deg.
Place all of the ingredients (except the strawberries) in a blender or food processor, and blend until oats are smooth. Pour mixture into a medium sized bowl, and stir in strawberries.
Use either foil liners or silicone baking cups (or a silicone muffin pan) so that the muffins won’t stick.
Bake muffins for 20-25min or until toothpick comes out clean.
